HAPPY ST PATRICK'S DAY!! I'm off to a Birthday party tonight so as a gift, and to celebrate St Patrick's Day, I made the birthday girl (who is Irish) some decorated shortbread. They're super easy to make and yummy - plus you don't have to actually decorate them, but it was fun. There's some decorating ideas at the end of this post so scroll down...

1 TSP Vanilla Extract
Icing sugar (for decorating)
Mix the sugar and butter in a mixer until it melts into a paste-like texture. Slowly add in the flour, making sure to use a sieve, and mix. Add the vanilla now too. The mixture will go crumbly so once you have that texture, take the mixing bowl and scoop up all the mixture into a ball.
Place the ball on a board, add a little flour to the surface so it doesn't stick. Gently pat down the ball with your palm to flatten it. Now take a rolling pin and flatten until it's about 5mm thin.
Line a baking tray with greaseproof paper.
Take your biscuit cutter and start cutting out shapes and lying them on the lined baking tray. When finished, put the tray of biscuits in the fridge to set for 10mins.
Take them out and bake in the oven for 20min on 160'c, until they are going golden brown.
Leave to cool on a wire cooling rack, then either decorate or dust with a little icing sugar.
