1 red onion, 2 cloves of garlic, a dash of olive oil, 3 carrots, 1 courgette, 1 small sweet potato (or handful of new potatoes), 1/4 tsp ground coriander, turmeric, cumin and a shake of chilli powder, 1 1/2 ltr water, 1 chicken (or veg) stock cube, a good tsp of dried garden herbs.
In a large pan, warm the olive oil. Dice the red onion and chop the garlic, add to the pan. Fry until soft and slightly toasted. Peel and roughly chop the carrots, add to the onion and garlic, toast slightly. Peel and roughly chop the potato and add to the pan. Trim the ends of the courgette and chop roughly, add to the pan and toast lightly. Now add the water, chicken (or veg) stock cube, spices and a good tsp of dried herbs. Either leave to simmer or microwave for 25mins and blitz, it can also go in the slow cooker. Add seasoning to taste, serve with some warm bread (optional).
