It's the weekend and I'm feeling that Autumnal stay-at-home and cosy up on the sofa, with a freshly baked cake and cuppa...you? Well, today I'm sharing my favourite Banana Bread recipe. It's heavily tried and tested, and is super easy to make, so why not try it this weekend.
100g butter or margarine
225g self raising flour
2 tsp baking powder
4 ripe bananas (over ripe mushy one work best)
Go ahead and preheat your oven to 180'c / gas mark 4. Use a little bit of the butter to grease your loaf tin and line with grease proof paper and grease a little. Using a large mixing bowl, beat the butter, sugar and egg together. Slowly add in the flour and baking powder. Peal, chop and add in the bananas and add in between 60-80g of walnuts for an extra flavour. Pour the mixture into your greased baking tin and bake in the oven for around 1 hour (60 mins) or until a skewer comes out clean. It will smell amazing but once its done, leave it to cool on a wire rack and then remove from the tin and enjoy. Serve in generous thick slices.
Tip: it keeps for a few days so wrap it up and enjoy through the week too as a lightly toasted slice with a warm drink.
